Boiled Icing

(#5 Sapa, Samal, Bataan, Philippines)

1 cup egg white

3 cups granulated sugar
1 tsp. cream of tartar
1 cup water

Put sugar, water and cream of tartar in a sauce pan, then bring to a rolling boil, mix egg white in a bowl with a high speed mixer, until stiff, then pour sugar mixture gradually. Mix for 10 minutes or until the consistency of the icing is already stiff.
