Hi, I'm making a 3-tier wedding cake and like to know how far in advance I can make the layers and refrigerate them. I need the cake done for a Saturday.

Freezing vs. refrigerating cakes

Should I crumb coat cakes if I intend to refrigerate or freeze them for use a few days down the road? When I take them out of the freezer or frig will condensation be expected?

When I have to do a wedding cake for Saturday, depending on the size, I will start baking on Wednesday, frost on Thursday and decorate on Friday. I bake all my large tiers on Wednesday, so on Thursday all I will have is the smaller tiers and the grooms cake, if I am making the grooms cake. Personally, I don't freeze but I know you can. My goal is to have me time on Saturday before I deliver the cakes and time if anything goes wrong. So I don't like having to decorating on the delivery day unless I have to.

Deb is so right, I did a 50th wedding cake, three tiers and I wrapped all the cakes in plastic wrap and then foil and they were all so moist and good. Lots of comments on how moist the cake was. Nancy of CA

Depending on the size of the cake, I start baking 3-4 days ahead of time. Wrap well with waxed paper, then freeze. Take the layers out as you are going to use them. I let them defrost about 30 minutes before icing. The cakes will be very moist and delicious!
