Can I put sugarpaste on top of chocolate ganache?

by Brightonbelle

I am making my son's wedding cake, it will be a three tier chocolate cake I would like to cut the cakes, fill them with chocolate ganache and then put ganache all over the top and sides of the cakes, will it be ok to then cover the cakes with sugarpaste? I am concerned about how easy it would be to get a smooth finish on top of the ganache, whether the sugarpaste will stick to the ganache and also how to prevent the ganache from possibly seeping through the sugarpaste. Any advice would be much appreciated.

Sugar Paste or Fondant?
by: Anonymous

Are you using sugar paste or fondant? If you are using fondant you can cover gamanche. Just remember ganache doesnt really set - so I would recommend using a chocolate butter cream or sugar frosting to frost the cake itself. If you are indeed usign sugar paste then no to the best of my knowledge the ganache would seep through. Good luck!
