Freezing cakes

Nancy is right about freezing the cakes. Make sure it is very tightly sealed. I made my mom's wedding cake and froze it before finishing the decorations(just make sure it thaws well before icing completely cause it will cause little dew drops on the cake if not)..Anyway she was still eating on her cake a week later and called me at 10 at night just to brag about how moist the cake still was. So I always freeze my cakes before finishing the decorating.

I freeze all my cakes before decorating them. Just be sure to seal them really good. Let them cool and I put them in an cake carrier that is sealed real good. You can wrap real good in plactic wrap and even foil over that. Or if you have a tupperware that you can fit it in, that will work. Let it thaw out well before frosting.
