I only use Barbie dolls. I take the legs off and wrap the lower half of the doll with plastic wrap. I keep the legs so the doll can be reassembled and given to the birthday girl.

Yes you can. Just cover the legs using plastic beg or aluminum foil to protect the barbie. Then cut a hole on the cake and insert barbie.
