Easter Bunny Birthday Cake

This Easter bunny cake was a birthday cake for a special friend, whose birthday is very close to Easter. I baked a chocolate fudge cake with fudge and marshmallow filling. I iced it in whipped buttercream and used jellybeans for eggs.

I placed coconut in a Tupperware bowl with a lid and added a few drops of green food color, then shook vigorously. I then placed the coconut on top of the cake for "grass".

I made the bunny out of large marshmallows, simply cutting the shapes and "gluing" them together with royal icing. The bunny's facial features I painted on using a very fine paintbrush and black paste food color.
