Hey, I never decorate my cakes the same day. To me it has been a disaster everytime that I tried to decorate the same they. I let them cool for about 2 hours on a table and them i place them in the fridge wrapped in aluminum foil.

After I take it out of the oven, I let it sit for a few minutes and then turn out on a wire rack to cool.
Let it cool COMPLETELY.
Anywhere from an hour or longer. Weather is also a determining factor.
It's cold here right now so if I put my cake downstairs, where it's not heated, it's COMPLETELY cooled in 30 minutes!
If you're using buttercream and it starts to melt when you apply it to the cake, it AIN'T cool! lol

I think untill it is completely cooled you cannot decorate it! You have to wait at least 3 hours so it could rest

CAKE TIME

AFTER ABOUT TEN MINIUTES I WRAP MINE GOOD AND FREEZE IT A FEW MINUTES AND THEN TAKE IT OUT AND START TO DECORATE OR SCULP WHATEVER COMES FIRST. PUT THE BUTTER CREAM ON AND LET IT SIT IN FRIG FOR ABOUT 20 MINUTES WITH THE BUTTERCREAM ON AND THEN ROLL OUT THE FONDANT TO COVER. IF YOU ARE JUST USING BUTTERCREAM, WAIT FOR IT TO COOL GOOD AND THEN PUT ONE COAT OF BUTTERCREAM ON AND THEN WHEN CRUSTED PUT SECOND COAT ON AND SMOOTH. OR USE A VIVA PAPER TOWEL TO SMOOTH WITH..NANCY OF CA
