i agree slower cooking with lower temperature does the trick

Bake your cakes in a 300 degree oven. It will rise much more evenly. A half sheet takes about 75 minutes. You can plan on anywhere from an hour to an hour and 30 minutes as far as time.

The rising in the middle is a good sign that your cake is nice and moist. Don't try to avoid the rise just level the cake. BTW, the part that you trim off is DELICIOUS with coffee.
