YES, KELLY IS SO RIGHT, THE VIVA TOWEL IS THE BEST WAY TO GO. DON'T USE ANY OTHER TYPE OF PAPER TOWEL, JUST VIVA FOR THE SMOOTHNESS. BE SURE TO FROST AND LET DRY A BIT TO THE TOUCH AND THEN SMOOTH. I FIRST PUT A THIN COAT ON AND THEN A LITTLE MORE ICING TO BE SURE ALL THE CAKE IS COVERED GOOD. GOOD LUCK AND SEND IN YOUR CAKE WHEN DONE...

smooth icing

Everyone has an opinion on this.
I have tried dipping my butter knife in scalding hot water and that didn't work to my satisfation.
I tried the paint roller too. Didn't like it either.

My favorite is the Viva! paper towel!
After icing cake or section, let icing air dry and crust over a bit.
Put the smooth side of the towel on the icing and rub your hand over the towel, don't move the towel. The heat from your hand will do the job.
