Making cakes ahead of time

by Missy

I have to make a cake with not much time to bake/cool/decorate. I usually take apricot preserves and melt it down to a glaze and put that on my cakes before frosting. If I bake, cool and glaze my cake 2 days before, would it be okay to put it in the freezer overnight and take out the next night to frost and decorate? Any input would be great. Thanks!

Freezing cakes

Yes, Angel is right, be sure your cakes are sealed real good and you can freeze them for a long time. I freeze mine always and they seem to be moister than regular cakes not frozen. I did notice that a lot of the bakers on TV freeze there cakes. Our big markets get some of there there cakes in that are frozen. Nancy

I always make mine one day, dirty ice the next then ice it the final day. When I freeze mine I tightly wrap it in ceran wrap and just set it in the freezer. I have always got comments on how moist my cakes are and good. I made my Moms wedding cake and done this and a week later they was still eating it and said how moist and great it still was.
