refrigerating cake with gumpaste flowers
by: Deborah

I live in a humid climate {South Alabama}, and when I refrigerated a cake covered with fondant, as it warmed to room temp condensation formed on the surface and left it very sticky. This might happen with the gumpaste too. I would do a trial run. Cover a cupcake with buttercream and fondant, the same way you would do on the cake, and place a piece of gumpaste on it. Refrigerate for 24 hours, then take out and let sit until it reaches room temperature. Climate may play a big part in the outcome. Good luck!
