I use buttercream that I make myself.
I thin it with water or the Wilton gel.

Sometimes I use those little candy letters if I'm in a hurry.

I DON'T KNOW IF YOU HAVE COLORS IN THE TUBE AT YOUR MARKETS. BUT THEY ALSO HAVE TUBE FROSTING AND SOME IS GEL AND SOME IS A BUTTERCREAM. JUST FOR NAME WRITING, ANY OF THEM ARE GOOD.

I think different people use different things. I use buttercream sometimes, royal icing, and also fondant or gumpaste other times.

The buttercream and royal are piped on the cake and the fondant or gumpaste are used when I want to cut the letters out. I use gumpaste if I want them to get hard so I can stand them up on the cake
