Can you die white chocolate? Should you use a double boiler to keep white chocolate melted.

I have tried this several times and failed. It changes the consistency of the chocolate.

I don't see any reason why you couldn't.
Try a small amount to begin with.

And I've been doing my chocolate in the microwave...and I've used the double boiler too.
