bleeding frosting colors

When I decorate a cake ahead of time and freeze it, I defrost it in the refrigerator before serving it.

Many times the darker colored frosting will bleed.
How can I prevent this from happening?

How long can you refrigerate?

How long will a decorated cake still taste fresh when kept in the refrigerator? Often I only have time to decorate very elaborate cakes a week before an event.

Don't freeze the cake. Try just refridgerating it. When the cake is frozen, as it defrosts, condensation forms on the surface of the frosting. The condensation will cause the colors to run or bleed. I've never had that problem with refridgerated cakes.
