Now I have a question! How do you make white chocolate fondant? I've never heard of that!

If it is marshmellow fondant, it will last a couple of weeks unfrigerated, several weeks refrigerated. {You can pop it in the microwave for a few seconds at a time to warm it up to use}. However, it seems to lose some of it's elasticity after the first week.
White chocolate fondant lasts up to 2-3 months in an airtight bag and you don't have to refrigerate it. It remains elastic and easy to handle.

yes, it will keep for a long time. If its dry put it in the microwave for a few seconds to soften ut up.
