Wedding Cake

I want to make a wedding cake that is going to take a lot of time to decorate. I use buttercream frosting that is made of shortening and butter flavoring. I was wondering if I have the frosting on the cake how long will it stay fresh for me to decorate? I don't have a lot of time each day for decorating so will this last at least a week?

A week might be a little bit too long to work on a cake. You want it to taste fresh.

The earliest I have ever made a cake is on Wednesday for a Saturday wedding. Although I have made cakes on Friday for a Saturday party and then have the people tell me they were still good on Tuesday.
