Whipcream dilema..

I'm baking a dinosaur cake for a little boys 7th birthday and the mom requested a white cake with whipped cream frosting.. I need it to be colored and all that.. any techniques or things I should know about when attacking this cake?

Whipping cream

I have been using whipping cream from the day that I started cake deco 3 years ago. Do not over beat the cream for frosting. Remember to use medium speed to beat until soft peaks form and gloss disappears. Whereby for the rest of the deco like flower, shell etc... You can beat the left over cream until stiff peaks form. But if you over beat the cream, just add a bit of the unwhipped cream, then hand mix will do.

Remember to work in an air-cond room as the cream is quite sensitive to temperature. Happy baking.
