CUP CAKES

I would like to know how to get my cupcakes flat on top - mine always rise to a peak & I need to cut the top off to ice them.


Also how do you get them all exactly the same size? I thought of weighting them. Does anyone have any other suggestions

Don't weigh them

Use a ice cream scoop to transfer the mix to the patty cups and get all same size

Melt the butter

If you melt the butter before adding it is supposed to make the cupcakes flat. I haven't tried it, but I read it in a cupcake book the other week.

Keep them

I would say to keep the rise on top and swirl your icing on. They are much more attractive. If you really want them flat, you will have to fill the cups with very little batter. Less than 1/3 lower. Hope this helps you. Nancy of CA
