I have made quite a few sponge cakes and covered them with fondant icing and they have been fine. The fondant has kept them fresh, after all they are sealed. Will keep about 7 days. No need to cover sponge with butter cream before putting fondant on.

I have been cake decorating for six months. I have made loads of ordinary sponge cakes and covered them with fondant and i have never had a problem. They always turn out nice and firm and level.

I WOULD NOT RECOMMENDED USING
A SPONGE CAKE WITH FONDANT AS THE ICING WILL SINK IT TO IT AFTER A DAY I WOULD YOUS SOMETHING LIKE MUD CAKE OR CARROT CAKE OR BUTTER CAKE
