How long before event should you prepare fondant cutouts that need to stand up right? Like butterflies and flowers for example.

A few days or weeks before

I will do a few days or weeks before the occasions, and leave them to dry totally before storing them in an air tight container with dehumidifier. Your modelling fondant will last for even a year or longer.

I made a wrecker cake for my grandson's 8th birthday last weekend. I used fondant for the detail work, such as, boom, stacks on truck, blowers, steps on side of truck etc. It took about 4-5 hours for some of the pieces, but overnight is better if you can wait that long.
