Frozen Cakes

Can someone please tell me...How far in advance can you bake a cake and freeze it(uniced, of course)?

I work in a bakery. My cakes come in frozen and I decorate them. We can store the frozen cakes up to 4 months. You do want to wrap them if you keep them that long. If you put it in the freezer just covered for a few days...when you take it out trim all four sides, and your good to go the cake is still moist, and very good.

I JUST DID THE 5O TH ANNIVERSARY CAKE AND I FROZE THE CAKES FOR THREE DAYS AND IT COULD HAVE BEEN LONGER AND STILL GOOD. I WRAPPED THEM SEPARTELY IN SARAN WRAP OR PLASTIC WRAP REAL GOOD AND THEN WRAPPED FOIL AROUND THAT. TAKE THEM OUT WHEN YOU ARE READY TO DECORATE A LITTLE EARLIER THAT DAY. BE SURE TO LET THEM THAW OUT WHILE THEY ARE WRAPPED. MINE WAS SO MOIST AND SO GOOD. I HEARD THEY CAN BE FROZE FOR 6 MONTHS AND STILL BE GOOD. MINE WERE NOT ICED..I DID ALL RED VELVET CAKES BUT THEY WILL ALL DO JUST AS WELL..GOOD LUCK, NANCY OF CAL
