How to cut a cake into a shape

I would like to know how to go about cutting a cake into a shape, such as the State of Texas. When would you cut the cake? Before adding a filling or after?

Should you then wet the crumb coat or give another layer of buttercream and then fondant straight away

I carve my cakes into shapes after I fill them. Then I chill them for about 30 minutes. Then, I ice with a buttercream crumb coat; chill again, then finish with icing or fondant. Good luck!
