Long Life Cake

Making a wedding cake will take long time. How can I make it ahead of time and keep it from drying out?

Is there a special recipe which lasts long?
Any helpful hints?

WEDDING CAKE
by: Nancy

I WOULD BAKE YOUR CAKES AND WHEN COOL WRAP EACH ONE IN PLASTIC WRAP THEN IN FOIL. BE SURE NO AIR CAN GET INTO THEM AND FREEZE. THE DAY YOU WANT TO DECORATE LET THAW OUT IN THE PLASTIC WRAP AND FOIL. YOU THEN WILL BE FREE TO COVER WITH YOUR FROSTING AND FILLING. I FOUND THAT THEY ARE EVEN MORE MOIST THAT WAY. I ALWAYS GET COMPLIMENTS HOW NICE AND MOIST MY CAKES ARE. MANY BAKERIES FREEZE THEM. JUST BE SURE THE ARE AIR FREE. GOOD LUCK NANCY (NRCOURTNEY@AOL.COM)
