meringue powder for wilton buttercreme

Can I do without adding meringue powder to the recipe for homemade wilton buttercreme? Is there a substitute other than powdered egg whites or is it vital that the powder is used?

Hi, you can make the buttercream without the meringue, it will be fine. Just be sure if you are making flowers or such, to have it stiff enough. otherwise you will be fine with out it. Good luck and don't forget to send in a picture of your cake when done...Nancy Of CA nrcourtney@aol.com my email

I only use it in certain recipes.
And I don't follow the recipe exact either.

When I took the class it said 1 cup shortening, 1 lb powdered sugar, 1 tsp vanilla and 3-4 tablespoons water and a pinch of salt.

So I double that!

I've read their buttercream recipe since and it says 1 cup shortening to 2 lbs sugar.....
I use 2 cups of shortening. It just works better for me!
