Cookie Monster Birthday Cake

Cookie Monster Birthday Cake

For my son's 1st birthday...I used a boxed cake mix. I baked two 8 inch layers. After the cakes cooled, I carved from top to bottom to make a mound shape.

Using store-bought white frosting, I added lots of blue food coloring. I reserved about 2 Tablespoons for the eyes (add to cake later).

Next, I frosted between the layers and all over the cake for an even color. Then I used frosting in a can with a small applicator tip (included with purchase) and made the frosting look like shaggy hair.

Using the reserved white frosting, I made circles for the whites of the eyes and Oreo minis for the pupils.

For a finishing touch, I added mini Chips Ahoy in between the layer as if Cookie Monster was stuffing his face with Cookies!
